Zingy Artichoke Salad!

Hello peanuts! In today's post I am bringing you my first ever recipe- the Zingy Artichoke Salad! Exciting! It's the perfect for starting 2014 off on a healthy and yummy foot. Sometimes in the cold months, especially after and during to holidays, it's easy to eat poor and stuff yourself with treats. This salad is a healthy and filling alternative to heavy carb and transfat-filled foods.


This recipe is not only delicious, but it's also easy, affordable, and healthy! Quadruple score! This recipe can also be varied by what you find in your market, too. So let's talk through the ingredients...

1/4 head of butter lettuce
1 cup mesclun (purple/green leaves)

3 medium marinated artichoke hearts *Can easily be found jarred in most grocery stores
Handful of favorite marinated olives *I used marinated green olives
1/3 cup rinsed blackberries *dried cherries or strawberries are also great! Use whatever you want!
6 cucumber slices cut into half moons
1-2 small marinated red peppers *Can easily be found jarred in most grocery stores
Salt and pepper to taste
Red Wine Vinegar to garnish





Preparation
Slice artichokes and red peppers into bite size pieces and rinse lettuce.
Make bed of lettuce, place all other ingredients on top. Finish with a sprinkle of salt and pepper and a splash of red wine vinegar.
